At 1228 Main, pastry is at the heart of the experience. This is a hands-on role for a skilled lamination specialist who takes pride in precision, consistency, and craft. You’ll be responsible for producing high-quality viennoiserie and artisanal baked goods in a fast-paced, standards-driven kitchen—where technique, timing, and attention to detail are everything.

We are seeking a Pastry Cook with strong lamination expertise to join our talented baking and pastry team.

Position Summary

As a Pastry Cook, you will focus on the preparation and execution of laminated doughs and a range of artisanal baked goods. This role is ideal for someone passionate about viennoiserie, with a sharp eye for detail and the ability to consistently produce high volumes without compromising quality.

You’ll play a key role in producing croissants, kouign-amanns, danishes, and other laminated pastries, while also contributing to bread baking and general pastry production. Success in this role requires precision, efficiency, and a strong understanding of dough development and fermentation.

This is an afternoon-to-evening shift , best suited for individuals who thrive in a fast-paced, high-standard kitchen environment.

 

Pay: $18 - $22 / hour

Key Responsibilities

• Execute laminated dough production (croissants, danishes, kouign-amanns, etc.) with consistency and precision

• Operate sheeters and bakery equipment safely and effectively

• Mix, proof, shape, and bake a variety of breads and pastries

• Support pastry production including fillings, glazes, and finishing components

• Follow production schedules to meet daily and weekly volume needs

• Maintain cleanliness, organization, and food safety standards throughout shift

• Collaborate with the Pastry Chef and team to continuously improve product quality and processes

Qualifications

• 1–2 years of experience in a professional bakery, patisserie, or pastry production kitchen

• Proven ability to produce laminated doughs at scale (croissants, pastries, breads)

• Experience in high-volume production environments preferred

• Strong understanding of fermentation, proofing, and temperature control

• Ability to work efficiently under pressure with strong attention to detail

• Team-oriented with a genuine passion for artisanal baking

• Flexible availability, including afternoons and evenings
